Cooking for myself this week, as the folks absconded on a cruise.

The problem, of course, is that I'm fine cooking for four, but lose all will to live when I cook for only me.

Thus, I've been playing a game of 'what do I have in my pantry?' for the past four days. Today it was a ripe avacado and an open bottle of cream in the fridge, so I made

Guacamole Soup



Take 1 1/4 cup chicken stock and simmer with several leaves of lemon verbeena. We make chicken broth by boiling the chicken carcass whenever we have a roast chicken -- add carrots and onions for a richer flavor! I grow lemon verbeena in my herb patch because I like the smell, and make syrup out of it for deserts and fresh fruit.

Meanwhile, peeled and seed the avacado. Place in blender with 1/4 cup of cream, lime juice (from a leftover lime half), black pepper, cayenne pepper, salt and minced garlic to taste. Blender until smooth.

Add chicken stock to blender and puree. Taste. Add more garlic as there is never enough garlic. Serve hot with pita bread or tortilla chips.



I'm ridiculously lazy about doing the shopping, so I'm probably going to be eating soup until I run out of chicken broth to use. Then I'll have to venture out into the wilds of suburbia and hike to the grocery.

Heh-heh, this assumes I can *find* an avocado that isn't filled with ugly black streaks inside. I've had the worst luck picking them out. And I love 'em. The soup sounds wonderful. Make a loaf of fresh bread to go with it and you'll be A-OK. The tortilla chips sound like an excellent choice, too.

I have good luck with avacados at the Whole Foods. Just act like they are pears -- buy them hard and let them ripen on your countertop. It will only take a few days, after all.

You know... I never thought to buy them hard and let them ripen on the shelf! And me an ag major! *Thumps head on desk* Thank you! I kept trying to buy them ready to eat. Big mistake. I'll try again with your technique.
