Peach Crisp Peach Crisp

from Going Solo in the Kitchen
A wonderful way to use up overripe peaches (or nectarines)

Ingredients
1 1/3 cup peaches, peeled and slices (about 3 peaches)
2 tsp lime or lemon juice
cinnamon
2 tbsp brown sugar
2 tbsp flour
1 tbsp sugar
1 tbsp butter
2 tbsp chopped nuts
heavy cream or vanilla ice cream (optional)

Directions
1. Butter a small 2-cup baking dish. Preheat over to 350 degree F.

2. Toss peaches, citrus juice, brown sugar and pinch of cinnamon. Put in buttered dish.

3. In another bowl, combine flour and sugar, then cut in butter with pastry blender or fork. Continue until butter is pea-sized.

4. Sprinkle over peach mixture. Top with nuts.

5. Bake in oven for 35-45 minutes. Peaches should be cooked through, with juices bubbling and topping slightly browned.

6. Serve plain, topped with cream or ice cream.
