I picked up some Pacific salmon on sale the other day so I'm trying the recipe for Lapsang Souchong Gravlax from Eat Tea.

If I like it, I'll try making it for a party or the next stitch'n'bitch at [personal profile] wolfshark's house.

I love Lapsang Souchong so I am curious how it will turn out! I used to make gravlax out of mahi-mahi when we lived on our boat, with salt, sugar, pepper, and dill, and it was good but very very salty.

The weight part is important! We used to bungee our fish between two flat plates of plexiglass. And pour off the liquid once or twice a day. But it's pretty simple. I hope it turns out good!
