The Summer Garden Potpie with Cheese-Herb Drop Biscuit recipe from Bean by Bean by Crescent Dragonwagon is really good, especially if you've grown the string beans yourself! I made the variant with 4 oz of mushrooms, and didn't bother to cook the zucchini beforehand -- it wound up tender and tasty anyway.

It's a vegetarian recipe that supposedly can be made vegan, though there are no instructions on how to make the veloute sauce vegan, just the drop biscuits. Does roux still work if you use margarine instead of butter?

And I finally made drop biscuit dumplings that are fluffy and light -- cooking achievement unlocked!

Does roux still work if you use margarine instead of butter?

Yes. You just need the fat molecules to coat the flour particles and keep them separate. Pretty much any fat+flour will work. Some just taste better than others.

Roux does work with margarine, but I've found it leaves a slight bitter aftertaste.

It's even possible to make roux with oil instead of butter or margarine. Also, if you need to restrict fat, instead of thickening with a roux made out of *anything* you can just do a reduction sauce.
