I have 4 quarts of strawberries... there is no way I can eat them *all* before they go bad.

This is because I went to the Adelphi Strawberry Festival yesterday with [livejournal.com profile] twistedchick, and we decided to purchase a flat and split them. Perhaps this was not the wisest idea ever.

Anyone have strawberry themed recipe suggestions for me?

Last time I found myself in that particular predicament we made strawberry daiquiris from the recipe in the Good Housekeeping cookery book. They were amazing.

Heh, Marc and the kids picked 20 pounds (2 heaping flats) of strawberries yesterday, so guess what I've spent the weekend doing.

I made a strawberry pie with a graham cracker crust, some strawberry lemonade concentrate (which I put up into jars, but which could also be frozen), base for strawberry ice cream in little quart bags, strawberry sauce for baked goods and ice cream, and there's a batch of strawberry jam simmering now. Recipes available if you want 'em.

If you want to bake something, a couple of weeks ago I sort of made up a berry cake recipe which was quite good. It's a basic sponge (1/2 cup butter, 1/2 cup sugar, 2 eggs, 1 t vanilla, 1 c flour), and then I chopped up some berries (I used a mix of blackberries, blueberries and strawberries since I was cleaning out the fridge, but this would be excellent with just strawberries), tossed them in flour, and then stirred them in at the end. 8 inch pan, 20 minutes at 350, cool and dust with powdered sugar, and you have a lovely, simple, buttery berry cake.

We really love strawberries here, obviously, but I'll be happy if I don't look at another one again. Everything in my kitchen has red all over it, and I'm roasting beets for dinner. :-|

It's excellent; the commenter who thought it was a bit tart might be right - although it's perfect for me, the kids would like it a little sweeter, I think. But it's like summer in a glass, and since we're trying to do better about local and seasonal eating, I'm looking forward to having this once the good berries are gone again.

Slice strawberries thin, put about half a cup of sugar on them, more or less depending on how many you do/how sweet you like them, and leave in the fridge to draw juice for a couple of hours. Strawberry shortcake filling/vanilla ice cream topping.

Strawberries freeze well for future use in recipes - if all else fails, store them!

With whatever's left (or any berries that are less pretty or partly spoiled), you can always make strawberry jam (http://allrecipes.com/Recipe/Strawberry-Jam/Detail.aspx) (note the comments on the recipe, of course). It's easy and can be frozen or refrigerated while you use it up, if you don't feel like getting into canning.

I went through my boxes last night, sorted out the mushy/damaged ones, cleaned them and threw them in the blender, then put the juice/glop into ice cube trays so I can have strawberry in my drinks. I'm eating them about a box at a meal, also. And tonight I'll figure out something else to do with them...

Put about a pound of strawberries in a preserving jar with a bottle of vodka. Close the jar (using the rubber seal) and stand it in a dark place for about a week. Give it a shake every day or so.

The vodka takes all the colour, perfume and flavour of the fruit, and is delicious at Christmas.

Strawberry soup. Whirl them in the blender with a bit of orange juice, then stir in a dash of cinnamon and whisk in a cup or so of buttermilk.

It is a fabulous first course for a summer dinner or... strawberry soup is never really wrong now that I think about it.
