I don't think the one I went to on Sunday has even twenty booths. They just have a lot of variety -- the market rules are you have to grown/raise/bake your products yourself, and I think they work to make sure there are a variety of items on offer.

The kosher flour seller is definitely new this year, but the place I get my apples (and other fruit) from regularly has been there all the years I've been going to that market.
